I finished assembling my MCE2005 home TV machine a couple of months ago and
have been slowly sorting out the remaining problems.

I would now like to get more of a sound system from the setup.

My motherboard has 7.1 capability with a Realtek onboard sound setup.

I can get the Realtek driver(updated from realtek) to recognise me plugging
in additional speakers and when tested they play the test sound. However in
TV mode I only ever get the TV internal speakers outputting sound -
irrespective of which output socket on the motherboard I use. How can I make
the MCE2005 deliver the stereo sound to more than one pair of speakers?

I have a Realtek audio chipset too built into my motherboard. It
sounds like your speakers are set-up correctly if the test produced a
sound. I assume you used the test from within the Realtek control
panel?
I think the TV channels would have to provide a multi-channel signal
for you to hear it through your speakers using digital out. I use an
analogue 2.1 speaker set-up and to enjoy sound through that I had to
disable Digital "Hi-Definition" sound through the Windows Control
Panel > Sound Options (not the Realtek control panel). Give that a go.

No TV broadcasts that are supported by Media Center (even Vista) in the UK
include better than stereo signals.

Analogue TV is at best NICAM stereo,
FreeView (aka. DVB-T) is at best MPEG1 Layer2 stereo,
Sky in DVB-S is also only stereo (and is not officially supported by Media
Center but can be used via unofficial means)
SkyHD in DVB-S2 does do surround sound but cannot be used in Media Center
even unofficially.

If you are playing standard DVDs then they should do surround sound (if the
disk includes it).
